Unlike cassia, which is commonly sold as cinnamon, this is Ceylon Cinnamon (Cinnamomum verum) — soft, layered quills of bark with a gentle sweetness and light floral notes. Naturally low in coumarin and ethically harvested, this is cinnamon as it was always meant to be.
